The warmer the weather gets, the more it seems like people are more willing to cook than in the winter. One reason for this is the fact that spring brings a lot of energy when it comes, which results of trying a lot of different activities, one of which often turns out to be cooked. So, if you want to try out your cooking skills this spring, we suggest you do it with one of these easy and quick seafood recipes.
A lot of people find seafood for too rich and they tend to avoid eating it, however, seafood, and especially fish, is quite a healthy food. It gives you enough energy to do your job and it provides a lot of vitamins and minerals your body needs. So, it is a great idea if you experiment exactly with this kind of food.
Spicy Shrimp Pasta
8 ounces of uncooked pasta
2 tablespoons of pure canola oil
¾ pound of peeled shrimps (you can buy them peeled and deveined, or you can do it yourself)
1 tablespoon of chopped garlic
1 can of tomatoes, diced and drained well, make sure there is no sauce left
½ cup of cream cheese
½ cup of chicken broth
Shredded parmesan cheese (optional)
First, you need to boil the pasta. You need to follow the instructions which are on the package, but basically you need to boil the pasta in water, which is 2 times the amount of the pasta. Do not forget to add a little salt as well before you put the pasta into the boiling water. While you are waiting for the pasta to be ready, you may proceed to the next step of preparing the pasta.
Get a large skillet and heat the oil over medium-high heat. When you are sure the oil is well-heated, add the shrimps and sprinkle them with pepper before stirring. Then mix them well.
Cook the shrimps for 2-3 minute. Then you need to add the garlic and mix the ingredients well. When they are almost ready you will notice it has turned slightly pink, reddish and looking delicious. This will be the sign that the shrimps are ready. Then just remove the skillet from the heating.
While the shrimps are still hot, but already away from the hot plate, you need to remove them from the skillet and put them in a clean container. Then add the rest of the ingredients into the skillet. Do not use a separate skillet for now. The first one will be good enough to do the job.
Put the skillet back on the stove and then add the tomatoes into it, then the broth and the cream cheese. Cook them a little on medium heat for 5 to 7 minutes. You also should not miss to forget that you need to stir the ingredients every now and then, so that they are able to mix as much as possible, especially when the cheese starts melting.
You will notice the mixture is cooked when the cheese is melted completely and the mixture has slightly thickened. Then it is time to add the shrimps and the ready pasta into the hot mixture once again. Cook it for 2 more minutes without changing the heating. The time will be just enough to help the shrimps and the pasta mix with the rest of the ingredients. Then remove the skillet from the heat.
The last step is to serve the pasta. Garnish it with parmesan cheese while the pasta is still warm so the cheese be able to melt a little. And that’s it!
