Spring is the best time of the year to have delicious and tender lamb. There are a lot of people who do not think that lamb is good because they have not tried certain recipes which give tenderness to the meat.
Today we have prepared for you a couple of lamb recipes which you can try on your own this spring to see that lamb can also be very delicious if you prepare it well. Check them out!
#1 Herb Marinated Lamb
1 rack of lamb
1 cup of red wine
3 springs of thyme
2 springs of rosemary
3 cloves of garlic
2 tablespoons of olive oil
1 tablespoon of salt
1 tablespoon of black pepper
1 tablespoon of chili powder
First you need to prepare the marinade for the lamb. Get the springs of rosemary and thyme and take the leafy part, the herb, off the springs. Then you need to chop them thinly so they become very small pieces. Put them in a bowl. Then get the garlic cloves and mince them. Add them into the bowl with the herbs and stir them together.
The next thing you need to do is add the salt, the pepper, the chili powder, and the olive oil. Squeeze the juice from half the lemon and add it into the bowl with the other ingredients. Then stir them all well together. Leave the bowl aside for now.
Now you need to get the lamb rack. If there is too much fat on it, you can cut some of it but be careful not to cut the meat as well. When you are ready with this you can move on to cutting the lamb rack into chops. They could be 4 double chops.
Put the double chops into the bowl with the marinade and cover them completely with it. You may have to use your hands to make sure that the marinade covers all the meat part of the chops completely.
When the chops are well seasoned with the marinade, leave them in the bowl and cover the bowl with some plastic foil. Leave the bowl in the fridge for at least half an hour so the lamb is nicely marinated.
After the 30 minutes have passed, you can take the lamb chops out of the fridge. Get a deep pan and heat some olive oil in it. Add the chops and stir fry them for a couple of minutes on both sides. Then add the cup of wine into the pan. Continue cooking the meat for one more minute and then take the pan off the hotplate.
The next thing you need to do is put the pan into the oven and bake the lamb for 30 more minutes at 175 0C. And when this time passes, you can take the pan out of the oven. You can cut the double chops into halves and serve them. You can serve them with some baked asparagus and carrots. And you are ready!
#2 Crusted roasted rack of lamb
2 racks of lamb
8 cloves of garlic
¾ cup of breadcrumbs
¼ cup of parsley
½ cup of parmesan
1 and ½ tablespoon of rosemary
1 tablespoon of olive oil
1 and ½ tablespoons of whole grain Dijon
First you need to get the lamb racks and to season them with some salt and black pepper on each side of the rack. Then you need to heat some olive oil in a deep pan and stir fry the lamb racks in it. Add the garlic cloves leaving them whole. Stir fry the lamb on each side until it gets a brownish crust. Then take the racks out of the pan and leave them aside.
Now you need to take the garlic cloves out of the pan and put them in a blender. Add the breadcrumbs, the parsley, the parmesan, the rosemary, and the tablespoon of olive oil. Blend these ingredients well until the turn into a mixture. Put the mixture in a plate.
Get the stir-fried lamb racks and apply the whole grain Dijon on the meat part of the racks using a cooking brush. Make sure you cover all of it. Then get the plate with the blended mixture and roll the racks in it. Make sure you again cover the meat part of the racks with the mixture.
Lastly, you need to put the lamb racks in a baking tin and bake them for 20-25 minutes at 200 0C. When this time passes you can take the tin out of the oven and serve the lamb. Cut the chops and serve them with some side dish.
