Healthy and Delicious Main Courses with Spinach

 

There are a lot of people who are not fans of the leafy green vegetables. It almost seems like that all the delicious kinds of foods are caloric and unhealthy, while the healthy ones are not preferred by a lot of people. Well, today we have decided to inspire you to eat healthily by showing you a couple of ways to cook healthy products in a way that you would find delicious.

That is why we have chosen spinach to be one of the main ingredients in the meals. So, here are the two spinach main course recipes to try on your own if you want to add some more vitamins and minerals to your diets.

Creamy Spinach Chicken

Ingredients:

4 chicken breasts
6 ounces of spinach
2 tablespoon of coconut oil
3 cloves of garlic
1 cup of chicken broth
1 tablespoon of lemon juice
½ cup of Greek yogurt
2 teaspoons of oregano
½ teaspoon of salt

Directions:

Step 1
The first thing you need to do is to season the chicken breasts on each side with some salt and pepper to your taste. Then get a deep pan and heat 1 tablespoon of coconut oil in it. Make sure it has melted completely and then add the chicken breasts into the pan and stir-fry them. You need to turn them and to make sure they are nicely cooked on each side. When they have turned brownish on each side, remove them from the pan.

Step 2
Do not remove the pan from the hot plate. Add the other tablespoon of olive oil and let it melt completely as well. Then add the garlic cloves which you need to chop beforehand. Let them sizzle for a minute in the heated oil and then add the chicken broth. Then add the tablespoon of lemon juice and the Greek yogurt. Stir all the ingredients well. Then add the oregano and stir the mixture well again. At this time you will notice that it has turned much thicker than in the beginning.

Step 3
Add the spinach and before stirring it together with the rest of the ingredients, season it with ½ teaspoon of salt. Lastly add the stir-fried chicken breasts into the pan once again. Remove the pan with the boiling mixture from the hot plate and put it in the oven. Bake it for 15 minutes at 200 0C. When the time is up, remove the pan from the stove.

Serve it by adding first the cooked spinach into the plate, then a chicken breast on top of it, and lastly pour some of the sauce on top of the chicken.

Shrimp and Spinach Alfredo

Ingredients:

5 ounces of spinach
2 pounds of shrimps
1 pound of cooked pasta
6 slices of bacon
1 cup of parmesan
½ cup of parsley
2 cups of heavy cream
4 cloves of garlic
½ onion
1 teaspoon of salt
1 teaspoon of pepper
some olive oil

Directions:

Step 1
First you need to get a deep pan and to heat some olive oil in it. Make sure it covers the surface. Then, when you know that is already heated, add the garlic and it you need to chop it beforehand. Then add the shrimps and stir them together with the garlic. Let them sizzle for a couple of minutes by making sure the shrimps are cooked on each side. Then need to turn pink at one point and this would be a sign for you to remove them from the pan.

Step 2
Do not remove the pan from the hot plate. Add the ounces of spinach into it. And then add the onion which you need to have chopped beforehand. Season them with salt and pepper and stir them all together. Due to the heat, the spinach will shrink after a couple of minutes. This will be a sign for you to add the heavy cream into the pan. Stir everything once again.

Step 3

Let the mixture start boiling and then add the cooked pasta. Mix it well with the rest of the ingredients. And then add the shrimps once again into the pan. Add the bacon, the parmesan and the parsley. The bacon could be cooked, or not, but it is important to chop it beforehand as well. Mix all the ingredients carefully together and in a couple of minutes you need to remove the pan from the hot plate.

And your dish is ready! Serve it while it is still warm. Enjoy!
