#1 Jalapeno Stuffed Chicken
3 chicken breasts
2 ounces of cream cheese
½ cup of cheddar cheese
1 cup of flour
1 cup of bread crumbs
salt to taste
First you need to get the jalapeno and wash it a little. Then cut it in half alongside. Remove the inner part of it, mainly the seeds. Then cut the two halves of the jalapeno into stripes. Then cut the stripes horizontally so it is very thinly cut.
Then you need to put the jalapeno pieces into a bowl. Add the cream cheese and the cheddar cheese into the bowl. Mix the three ingredients together using a fork. It should be thoroughly mixed so the three ingredients have equal part in the mix.
The next thing you need to do is to get the chicken breasts and to season them with salt on each side. Then cut them on the side to make a hole big enough to put some stuffing inside. Get a spoonful of the jalapeno mixture and put it inside the chicken breast hole. Close it inside. Do the same with the other breasts.
Then you need to roll the stuffed chicken breasts into a bowl of flour, then into a bowl of raw scrambled eggs, and then into a bowl of bread crumbs.
Heat some oil into a pan and once it starts sizzling a little add the three stuffed chicken breasts in it to stir-fry it. Fry them on each side for a couple of minutes until it turns brownish. Once the color on each side is the same on both sides, take the chicken breasts out of the pan.
After that you need to put the three stir-fried chicken breasts into a baking tin. Put it in the oven and bake it for 20 minutes at 1800 C. After the time passes, take the chicken breasts out of the oven. And voila, they will be ready! Serve them garnished with a fresh jalapeno.
#2 Jalapeno dip
8 ounces of cream cheese
1 cup of sour cream
2 cups of cheddar cheese
1 cup of parmesan
½ cup of Italian bread crumbs
4 tablespoons of melted butter
1 tablespoon of dried parsley
First you need to get the jalapenos and to cut them in half vertically. Remove the inner part of them. Then put them on aluminum foil and broil them on a grill. Once the peel of the jalapenos turns dark, brownish-blackish, take the jalapeno pieces off the grill. Leave them aside for a while to cool down.
Once the broiled jalapenos have cooled down a little, peel them off to remove the dark, burned parts of it. Then cut the jalapeno into small pieces – first vertically and then horizontally. Leave them aside for now.
Now you need to get a bowl and to put the cream cheese into it and the sour cream. Mix them well and if it is possible do it with a mixer or blender. Then add the cheddar cheese into the bowl and ¾ cup of the parmesan.
Finally add the jalapeno pieces as well and start mixing the ingredients. If you want to do it faster, use a mixer. When this is ready, leave the mixture aside for now.
Now you need to get a clean bowl and to put in it the bread crumbs and to pour the melted butter on top. Then add the remaining ¼ cup of parmesan and the dried parsley into the bowl as well. Mix these ingredients well until it is all turned into a homogeneous mixture.
The next thing you need to do is to get a deep pan. Put the cream cheese mixture on the bottom of it and spread it evenly. Then on top of it spread the other mixture with the bread crumbs. Make sure it completely covers the bottom layer.
The last thing you need to do is to bake the dip in the oven for about 20 minutes at 2000 C. After the time passes, take the pan out of the oven. You can serve the dip sprinkled with some fresh parsley if you like.
Enjoy your meals!
