Nowadays there are a lot of people who decide to become vegetarians for one reason or another. But even if a person is not a vegetarian, this does not mean that they should not skip having meat from time to time. There are many nutritious recipes with vegetables and dairy products and eggs, that one can even not notice the lack of meat in the dish.
Here are the vegetarian recipes we have prepared for you to try on your own when you feel like having some dish without any meat!
#1 Veggie Snack
½ cauliflower head
1 broccoli head
2 garlic cloves
½ teaspoon of onion powder
1 teaspoon of salt
½ teaspoon of pepper
1 ¼ cups of bread crumbs
½ cup of bread crumbs more
First you need to peel the carrot and to cut it in several pieces. Then wash the broccoli head and cut it into pieces as well. Instead of a knife, you can use your hands to break the head. You should do the same with the half cauliflower head – wash it and then break it into pieces.
Then you need to put the carrot pieces, the broccoli and the cauliflower pieces into the blender. Then add the two garlic cloves into the blender as well. You need to peel them beforehand. And then add the egg. Season the ingredients with the salt, the onion powder and the pepper and then start blending.
Blend the ingredients in the blender for about a minute, until they do become almost thinly chopped. Then add the 1 and ¼ cups of breadcrumbs into the blender and then continue blending the ingredients for a few more seconds until they are not blended completely.
When the mixture in nicely blended, you can move on to the next step. Scrape a spoonful of the mixture and create a flat round piece of it. Then roll it into the extra ½ cup of bread crumbs. And then put on a baking tin lined with baking paper. Do the same with the rest of the mixture.
When all the round veggie pieces are rolled in bread crumbs and are in the tin, you need to bake them at 200 0C for about 25 minutes. There is also another thing you need to do. After 15 minutes of baking you need to flip the pieces to bake them on the other side as well.
When the time is up, you need to take the pieces off the baking tin. And they will be ready to be served. You can serve them with some ketchup. It is a nice snack when you have invited some friends over.
#2 Spaghetti Primavera
The next recipe is one which is a fresh and spring one, perfect for this month. It is spaghetti Primavera. Here is how you need to cook them!
16 ounces of cooked spaghetti
3 garlic cloves
1 cup of asparagus
2 cups of broccoli
1 cup cherry tomatoes
salt to taste
pepper to taste
a couple of tablespoons of olive oil
First you need to get a deep pan and to heat the olive oil in it. Then chop the garlic cloves and add them into the pan. Then chop the onion and add it as well into the pan. If you want you can dice it instead. Stir the two ingredients together and cook them for a minute or so.
Then you need to add the asparagus which you need to cut into pieces beforehand. After that add the broccoli. If you want to make it easier for you to eat it later, you need to cut them into pieces as well, but let it still show that these are broccoli.
Then wash the zucchini and dice it. Add it into the pan with the rest of the ingredients and mix them all together. Season them with some salt and pepper to your own taste and continue mixing the dish.
Squeeze the lemon juice from the lemon and pour it into the pan seasoning the rest of the ingredients. The lemon juice will add a fresh taste to the spaghetti.
Then wash the cherry tomatoes and cut them into halves. Mix them with the rest of the ingredients in the pan.
Finally, you need to add the cooked spaghetti into the mixture. Mix all the ingredients carefully by continue cooking them for one more minute. Then take the pan off the hot plate.
And voila, the Primavera Spaghetti are ready! You can serve them. Enjoy your meal!
