There are a lot of people who not only like cooking in general, but they also prefer healthy bio products in their cooking because they know how important is to have nutritious food. Today we have prepared a couple of recipes for those of you who like good food and choose carefully the products they eat. That is why we have chosen the main ingredient to be zucchini.
Zucchinis do not have many calories and they are also good for one’s heart. They contain antioxidants and vitamins, including vitamin C. If you like this kind of vegetable or if you are not afraid to give it a chance, then here are two delicious zucchini recipes you could try.
This recipe is perfect for those of you who do not want to eat pastry because the zucchini lasagna does not consist of lasagna noodles. They are substituted by the zucchini. Here is what you need to do!
1 pound of ground turkey
28 ounces of crushed tomatoes
3 garlic cloves
2 teaspoons of dried basil
2 teaspoons of dried parsley
2 teaspoons of dried oregano
½ teaspoon of salt
½ teaspoon of black pepper
4 tablespoons of olive oil
1 tablespoon of tomato paste (optional)
1 bay leaf
For the ricotta sauce:
2 pounds of ricotta
1 tablespoon of fresh parsley
¼ cup of Parmesan
¼ teaspoon of salt
½ teaspoon of pepper
First, you need to wash the zucchini and to remove the front piece of it where the stem was. Then, without peeling them, slice them into very thin slices. For this purpose you could even use potato peeler. You only need to make sure the slices are thin.
Then line the zucchini slices in a tin between two sheets of cooking paper. This way while you are preparing the rest of the lasagna, the paper will absorb some of the zucchini moisture. And simply leave them aside for now.
Get a cooking pot and heat the olive oil in it. Get the onion and chop it. Then thinly chop the two garlic cloves as well. Add them both into the already hot olive oil. Cook them for a couple of minutes while constantly stirring them.
Now you need to add the ground turkey into the pot and mix it well with the onion and the garlic. In a minute add the tomatoes and all the spices – the oregano, the basil, and the parsley. Season it all with the salt and pepper and lastly add the bay leaf.
Mix them all well and let the mixture simmer for about 30 minutes. You should stir it occasionally as well. When the time is up remove the pot from the hot plate and also remove the bay leaf from the rest of the sauce. And leave it aside for now.
Now you need to make the ricotta sauce. Get a big bowl and mix in it all the ingredients for the ricotta sauce. First add the ricotta, then the egg and the fresh parsley. Then add the Parmesan and season them all with salt and pepper. Mix all the ingredients well using a whisk.
The last thing you need to do is to prepare the lasagna itself. Get a lasagna tin where you will bake it. Apply some of the tomato mixture on the bottom of the tin, then line on top of it zucchini slices. And on top of the zucchini add a layer of the ricotta sauce. You can also sprinkle some extra Parmesan on top of the last layer.
And then repeat the whole layering process until you are out of ingredients. The important thing is that the last layer is tomato sauce and you should sprinkle some extra Parmesan on top of it.
Bake it for 50 minutes at 190 0C. Serve it while it is still warm garnished with some fresh parsley. And it is ready!
Zucchini Chicken Alfredo Recipe
The next recipe is an interpretation of the traditional Chicken Alfredo recipe. Here is what you will need for it.
2 tablespoons of butter
2 chicken breasts
¾ cup of cream
1 cup of Parmesan
3 cloves of garlic
2 tablespoons of parsley
1 teaspoon of salt
1 teaspoon of pepper
First you need to wash the zucchini and to cut the first and last piece of them. Then cut them into slices or into sticks. Microwave them for two minutes and then leave them aside while you are preparing the rest of the meal.
Now get a cooking pot and heat it. Add the butter and let it melt completely. Then add the chicken breasts which you need to cut into pieces beforehand. Then season them with salt and pepper.
Stir them and let them cook for a couple of minutes. Then add the garlic cloves which need to be chopped. Cook the chicken for two mire minutes. Now it should have a light brownish-goldish color.
After that you need to add the cream, the Parmesan, and the parsley. Mix all the ingredients well and cook them for about 5 more minutes. By this time the cream should have slightly brownish color.
Remove the pot from the hot plate and add the zucchini pieces into the rest of the ingredients. Mix them well. Serve the dish while it is still warm.
