There are more and more people nowadays that decide to give up eating not only meat but all kinds of animal products. They either decide to do it because of some moral reasons, or because they want to be healthie and stronger. Whatever their reasons are it is true that vegetarianism and veganism are becoming a huge trend.
If you are not still sure whether you will like such kind of food, you need to have a couple of dishes and then to decide. And I you have a vegetarian dish every now and then, it surely would not mean that you are turning into a vegan. You could try some recipes at your own and see how delicious they could be.
Today we have prepared for you a special vegetarian dish which you could try on your own this winter to see that some dishes can be both delicious and healthy. We have prepared for you a veggie chili recipe which can keep you warm this winter. So do not miss to try it out at home! Here it is!
1 and ½ cups of quinoa
1 cup of red kidney beans
1 cup of pinto beans
1 cup of black beans
1 cup of corn
28 ounces of crushed tomatoes
4 cups of veggie stock
2 cups of water
1 tablespoon of lime juice
1 red pepper
8 garlic cloves
1 tablespoon of olive oil
4 tablespoons of chili powder
1 tablespoon of cumin
1 tablespoon of cayenne pepper
1 teaspoon of oregano
1 tablespoon of cilantro
salt to taste
black pepper to taste
First you need to get a deep pot and to heat the olive oil in it. Then you need to chop the garlic cloves and to add them into the pot. Dice the onion and add it as well into the pot. Then stir them together.
Wash the pepper and cut it into small pieces. Do the same with the jalapeno. Add them both into the pot and season all the ingredients in it with salt and black pepper to your own taste. Then stir them well.
Sprinkle the cayenne pepper, the chili powder and the cumin on top of all the ingredients in the pot and stir them all well so they are seasoned equally.
After that you need to wash the tomatoes and to cut them into cubes. Then put them into the pot with the rest of the ingredients. Right after that add the can of crushed tomatoes, the veggie stock, and the water.
Stir the mixture a little and then add the quinoa, the red kidney beans, the black beans and the pinto beans. Stir the whole mixture well once again. And then put the lid on the pot and let it simmer for about 25 minutes. You could stir the mixture every now and then meanwhile.
The next thing you need to do after the 25 minutes have passed is to take the lid off the pot and stir the mixture some more. Then get the corn and add it into the bowl. Right after that add the lime juice.
Sprinkle the oregano and the cilantro on top. Then stir the mixture well so the newly added ingredients get evenly into the pot and the dish gets seasoned nicely.
After that you need to put the lid back onto the pot and let the dish simmer for additional 5 minutes. Once they have passed, you can take the lid off and stir the dish again. By this time it should be well cooked, so you can serve it. You can leave it aside to cool down a little as well. And voila, the veggie chili is ready! Enjoy your meal!
