Nowadays people are used to trying different kinds of cuisines from all over the world. They may like something way more exotic than what they have expected. And this is actually something great because it makes people understand other cultures better and at the same time opens their mind. On top of that interesting and unusual recipes can encourage people to experiment while they are cooking as well.
Today we decided to show you an interesting recipe which some of you may find unusual and new and others can be used to such kind of recipes already – a salad with fruits in them, peaches. It is perfect for the end of the summer because it canhelp us keep the warm weather for some more time. The recipe is also fresh and tasty. So, here is the salad recipe with peaches!
Grilled Peach and Chicken Salad
2 chicken breasts
5 ounces of leafy green vegetables mixture
1 bowl of grape tomatoes
1 small cucumber
½ red onion
½ cup of pecans
salt to taste
black pepper to taste
For the dressing:
¼ cup of balsamic vinegar
2 tablespoons of olive oil
¼ cup of honey
2 teaspoons of salt
1 teaspoon of black pepper
First you need to prepare the dressing for the salad because half of it you are actually going to use when you are grilling the peaches and the chicken.
So, you need to get a bowl. Mix in it the balsamic vinegar with the olive oil and the honey. Then add the teaspoons of salt and black pepper and stir the mixture well.
When you are sure that all the ingredients are mixed well, pour half of the dressing in another bowl. You are going to use it for the grilling.
And since we mentioned the grilling part, it is time to do it. First wash the peaches, then cut them in halves and remove the stones. Then using a cooking brush apply some of the mixture on the inner side of the four halves of peaches. After that grill them with the inner parts on the grill for a couple of minutes until they turn caramel-brownish. Make sure the grill is pre-heated.
Now you need to grill the chicken breasts. It is going to take you a bit longer since meat grills more slowly than fruits, for example. Before that, though, you need to season it with some olive oil and salt and pepper to taste. Make sure you season both sides of the chicken breasts.
Then put them on the already heated grill. Grill them on one of the sides. In a few minutes, when the meat has already started going whitish, flip the chicken breasts.
Apply the half-grilled sides of the breasts with some of the honey-dressing mixture. In a few more minutes flip the breasts one more time and apply some of the honey-mixture on the other whitish chicken side.
In a couple more minutes repeat the same step: flip the chicken breasts one more time and apply some more of the honey mixture. And slip once more the breast this time without applying extra honey dressing. After that take the chicken breasts off the grill.
Now when both the peaches and the chicken are nicely grilled, you need to slice them into pieces. They could, for example, be a couple of bites big. Then wash the cucumber and the tomatoes. Cut the tomatoes in halves and the cucumber into half-circular pieces. Get the leafy green vegetables mixture and wash it as well.
Put the already washed and cut vegetables in a big bowl. Add the grilled peaches and chicken breasts pieces as well. Then get the onion and slice it. Add it into the bowl. Finally add the pecans as well.
Season all the ingredients in the bowl with the remaining half of the honey dressing. And mix everything carefully and well. When you are ready with this step, you can go on and serve the dish.
