Potatoes are a lot of people’s favorite type of food because it is easy to cook and it can be cooked in a lot of different ways and also it is very filling. There are thus a lot of recipes which include potatoes. Of course, a lot of diets do not include potatoes because they contain carbohydrates, but having them every now and then will not do any bad to you.
Today we have prepared for you 2 delicious recipes with a specific type of potatoes – mashed potatoes. You can try them when you are expecting guests, or when you want to escape from that “too-healthy-loosing-pounds” kind of eating. Here is what we have prepared for you!
#1 Mashed potato wantons
1 and ½ tablespoons of butter
6 tablespoons of sour cream
4 tablespoons of grated parmesan
1 clove of garlic
1 teaspoon of thyme
1 teaspoon of salt
black pepper to taste
First you need to prepare the mashed potatoes. Peel the potato and cut it into cubes. Then get a deep pan and put the potato pieces into it. Season them with a teaspoon of salt and then cover them with water, make sure it is not too much. Then boil the potatoes until they are tender.
Once the potatoes are ready, take the pan off the hotplate and drain the water. Put the potatoes into a bowl and mash them using a fork. They will be very tender so this will be easy to do.
After that you need to add half a tablespoon of butter into the bowl. Add also the sour cream and the grated parmesan. If you want, you can use a vegetarian parmesan. Mix the ingredients in the bowl well until it is turned into a homogeneous mixture.
Leave the mashed potatoes aside and get a clean pan. Heat 1 tablespoon of butter in the pan. Once it is completely melted add the shallot. You can chop them thinly, or if you like onions in general, you can leave the shallow in big round pieces.
Season the shallot pieces with salt and black pepper to taste and stir them. Continue stirring them for some more time and then add the garlic clove. You can chop it beforehand. Finally, add the thyme. Stir well once again and then take the pan off the hotplate.
Now you need to add the shallot mixture into the bowl with the mashed potatoes. Stir the mixture well. This will be the stuffing of the wantons.
Now get the wanton wrappers. Get a piece and put a spoonful of the mixture on the center of it. Then,using your finger, apply some water on the four sides of the wrapper. Then fold the piece with the stuffing inside making it in a triangular shape. Do the same with the rest of the wanton wrappers.
Once the wantons are prepared, you need to fry them. Heat a pan of oil at 1800 C. When the oil is heated enough, you need to fry the wantons in them. Turn them around and deep-fry them until they turn brownish. When they are ready, take the wantons out of the pan.
And voila, the wantons are ready! You can serve them with some bowl of sour cream as a side dish.
#2 Gravy-stuffed mashed potatoes
3 pounds of cooked potatoes
1 bowl of gravy
½ cup of butter
½ cup of sour cream
4 egg yolks
½ teaspoon of nutmeg
salt to taste
black pepper to taste
First you need to get ice-cubes shape and to pour the gravy in the shapes. Then put them in the freezer. Meanwhile you can prepared the mashed potatoes.
Get the cooked potatoes and put them in a bowl. Mash them well. Season them with some salt and pepper to taste.
Then add the butter, the sour cream, and the egg yolks into the bowl. Season it with the nutmeg. Mix all the ingredients well until it is all turned into a homogeneous mixture.
Once the gravy has frozen enough, you need to take it out of the freezer. Get a baking tin and put a baking paper on the bottom of it.
Scrape a handful of the potato mixture and make a ball of it. Put it on the bottom of the tin. Then put a frozen piece of gravy on top of it, in the center. Then put another handful of ball on top of the first piece, closing the frozen gravy inside. Do the same with the rest of the mixture. There should be about 6 such pieces.
Put the tin in the freezer for half an hour to freeze it completely. Once this time has passed, take the tin out of the freezer and put some egg wash on top of each one of the pieces. Then put the tin in the oven. Bake it for half an hour at 2200 C. After that you need to take the tin out of the oven.
And voila! The dish is ready!
