There are a lot of people who like to have healthy meals and who try to eat a lot of fancy products which can only be found in special organic stores. These products are, of course, healthy and delicious but not everyone can afford to buy such products because they are a bit expensive.
With the increase interest in these products people often forgot that some of the traditional products are also healthy and very delicious. And if we add to that the fact that these products are also cheaper than the others, they will make the perfect dish.
Today we have prepared for you a recipes with a cheap, delicious, and healthy product – beans, which people should not forger including in their diet. It is a layered bean dip which can be served as a starter. Check them out!
Layered Bean Dip
2 cups of black beans
2 cups of cherry tomatoes
¾ cup of black olives
1 and ¼ cups of sour cream
1 and ½ cups of shredded cheddar
2 tablespoons of olive oil
2 garlic cloves
1 teaspoon of cumin
1 teaspoon of cayenne pepper
3 pinches of salt
1 pinch of black pepper
First you need to dice the shallot and to mince the garlic cloves. Then get a pan and heat the olive oil in it. Add the shallot and the garlic cloves into it and stir them. Continue stirring the two ingredients by letting them sizzle for a couple of minutes.
When some time has passed, get the black beans and add them into the pan. Stir them together with the shallots and garlic pieces. In a minute or so they will get softer.
When this happens you need to mash them well so the bean are turned more or less into a puree. Season after that the mashed beans with cayenne pepper, cumin, a pinch of salt and a pinch of black pepper. Stir the mixture well to season it evenly and then take the pan off the hotplate.
Now you can get some small tin and put the whole mashed beans mixture into it spreading it evenly on the bottom of it. Then leave it aside to prepare the other layers of the dip.
Get a bowl and add the sour cream in it. Then cut the lemon in half and squeeze one of the halves. Add the lemon juice from it in the bowl with the sour cream. Season this mixture with a pinch of salt and then stir it well. After it is ready you need to spread it on top of the bean layer of the dip.
Now you need to peel the avocados and to remove the stones. Cut them in halves and put them in a bowl. Season them with the lime juice of the other half of the lime and also add the zest of this half lime into the bowl.
Season them with a pinch of salt and then begin mashing the avocados. You can use s fork for that. Make sure there are no big pieces left. And after that you need to spread the mashed avocado mixture on top of the sour cream layer of the dip.
Lastly, you need to spread the shredded cheddar cheese on top of the last layer evenly, then wash the cherry tomatoes, cut them in halves or quarters and put them on top of the cheddar layer. Then add the black olives which you need to cut into small pieces beforehand.
If you want to add some greenery on top, you can add some chopped scallions, about ¾ cup of it, and 1 cup of cilantro on top of the scallions. They are optional, of course. And voila, the dip is ready. You can wait for an hour or so before serving it if you want the layers to absorb some of the ingredients of the other layers.
