A lot of people nowadays begin to realize that cooking is a great way to save yourself a lot of money and at the same time to have delicious and quality food which is not fattening. Of course, cooking also takes a reasonable amount of time, but still there are recipes which take no more than 15 minutes to be prepared.
Today we have prepared for you a couple of recipes which are delicious, easy to prepare, and healthy. Here are the two recipes with stuffed vegetables we have prepared for you today.
#1 Stuffed cabbage rolls
1 green cabbage
1 pound of ground beef seasoned with salt and black pepper
1 can crushed tomatoes (28 ounces)
½ cup of uncooked rice
2 garlic cloves
2 tablespoons of olive oil
1 tablespoon of paprika powder
2 ½ teaspoons of chili powder
2 teaspoon of cumin
2 teaspoons of dried oregano
salt to taste
black pepper to taste
Sour cream and cilantro for garnishing
First you need to prepare the sauce for the cabbage rolls. You need to get a deep pan and heat the olive oil. Then you need to add the garlic cloves which you need to mince well beforehand. Stir the garlic cloves a little.
Then you need to add the can of crushed tomatoes in the pan. Season them with 1 tablespoon of paprika, 1 and ½ teaspoon of chili powder, 1 teaspoon of cumin and some salt and black pepper to your taste. Stir the sauce well after that and in a couple of minutes take it off the hotplate.
Now you need to get the ground beef and season it with some salt and black pepper if you have not yet. Then you also need to season it with 1 teaspoon of chili powder and 1 teaspoon of cumin.
Add also the dried oregano and the uncooked rice. Before you stir everything together you need to add a cup of the tomato sauce you prepared into the bowl with the ground beef. Then mix the ingredients in the bowl well.
The next thing you need to do is boil some water in a pot. While you are waiting for the water to start boiling, you can get the cabbage and remove the core from it without cutting it into pieces. Leave it whole.
Put the cabbage in the boiling water for 15 minutes to simmer, then take it out. One more thing that you need to have in mind is that the cabbage should not be covered in water completely.
Once you have taken the cabbage out of the boiling water, peel a leaf of it. Get a spoonful of the ground beef mix and roll it inside the cabbage. Do the same with the rest of the leaves until the whole ground mixture is used. There could be about 10 cabbage rolls.
Put the cabbage rolls in a relatively deep cooking tin and pour the rest of the tomato sauce on each one of them until there is no more sauce left.
Now you need to bake the cabbage rolls by first covering the tin with some aluminum foil. Then bake the cabbage rolls for 45 minutes at 180 0C. After the time is up the cabbage rolls will be ready to be served. You can garnish them with some chopped cilantro and some sour cream.
#2 Cheese stuffed peppers
6 big red bell peppers
15 slices of provolone
1 tablespoon of olive oil
1 pound of flank steak
2 tablespoons of butter
3 green bell peppers
2 tablespoons of Worcestershire sauce
1 tablespoon of paprika
1 tablespoon of garlic powder
1 teaspoon of black pepper
2 teaspoon of salt
First you need to prepare the steak. Cut the whole of it into lines. Then get a pan and heat the olive oil in it. Add the flank slices into the pan. Season them with the paprika and the garlic powder.
Then add the half teaspoon of black pepper and the teaspoon of salt. Finally, you need to add the Worcestershire sauce into the pan and stir well all the ingredients there so they are seasoned properly. Cook it for a minute or so.
When you have cooked the flank steak for a couple of minutes, you need to take the pieces out of the pan but leave the pan on the hotplate. Add the tablespoons of butter in it and stir them with the sauce until the butter melts. Then get the onions which you need to have cut into big pieces beforehand and add them into the pan as well. Stir the mixture well.
Wash the green bell peppers and cut them into slices. Add the slices into the pan and season them with half a teaspoon of black pepper and 1 teaspoon of salt. Stir all the ingredients in the wan well and continue stirring the mixture for a couple of minutes. Then you can take the pan off the hotplate.
Now you need to get the bell peppers and wash them. Cut the top part of them and scrape the inside part of the bells where the seeds are. Then you need to fill the bell peppers. First put a layer of steak slices, then a layer of onion mixture, and then a piece, or half a piece, of provolone. Repeat the layering once again and make sure the last layer is provolone.
Put the stuffed bell peppers in a deep baking tin and bake them in the oven for half an hour at 200 0C. When the time is up, take the tin out of the oven. You can sprinkle some chopped cilantro on top. And voila, the stuffed bell peppers are ready!
