There are a lot of people who eat only chicken because it does not have a lot of calories and it is delicious at the same time. However, if you want to change the meat you have and you still want some that is healthy and that does not contain a lot of calories, then you should definitely try beef. This meat does not contain a lot of fats and it is very nutritious, not to mention delicious. To show you this we have prepared for you a delicious lunch recipe with beef to try it yourselves. Beef-filled baked potatoes
People who like potatoes are quite likely to fall in love with this recipe. It is more or less easy to cook and it is a good idea for an appetizer when one has guests. Here it is what you need to do!
2 big boiled potatoes (with peels)
225 grams of rump steak
30 grams of butter
½ an onion
2 garlic cloves
125 grams of mushrooms
1 teaspoon of mustard
1 teaspoon of paprika
190 milliliters of beef stock
3 tablespoons of sour cream
salt to taste
pepper to taste
First you need to get the boiled potatoes and to cut them in halves. Scrape the inner part of the potatoes and put it in a bowl. You should not scrape the whole inner part of the potatoes, but still leave some flesh with the peel on. Leave them aside for now.
Get a pan and heat a couple of tablespoons of olive oil in it. Then get the rump steak which you need to have cut beforehand in small pieces. Fry the meat and make sure it is evenly fried on each side.
This means when it is fried on one of the sides, you should turn it to fry it on the other. When the meat turns from red to brownish it is a sign that it is ready. Get it out of the pan, but do not take the pan off the hot plate.
Put the butter into the hot pan and stir it a little until it melts completely. Once it is ready, get the onion and add it into the pan. You should chop it beforehand. Chop the garlic cloves and add them into the hot pan as well. Stir them all together. Season the mixture with some salt.
Now chop the mushrooms and add them into the pan with the rest of the cooking ingredients. Stir them well together. Add the teaspoon of mustard and the teaspoon of paprika. And after that mix all the ingredients together.
Then add the potato flesh you have scraped from the inner part of the 2 potatoes and add it into the pan and again mix the ingredients well. Pout the beef stock in the pan as well and add the sour cream. Stir the ingredients carefully.
The last ingredient you need to add into the pan is the fried pieces of rump steak. Season them with salt and pepper to your taste. Then mix everything together as well. Cook the mixture for a couple more minutes while constantly stirring it and then take the pan off the hot plate.
Get the 4 halves of potatoes and fill them with the steak-potato sauce. Place them in a baking tin and bake them for about 8-10 minutes at 200 0C. When the time is up, get the potatoes out of the oven. They should have a nice brownish crust on top.
Serve them while they are still warm. Garnish them with some fresh parsley, or if you prefer you could use fennel instead. And your meal is ready. Enjoy it!
