Cozy Soup Recipes to Try This Weekend

 

There are a lot of people who like eating soups, but they just do not have the time to cook them since it takes much more time. That is why people tend to cook soups more often at the weekends when they are free. Soups are very healthy especially if the right ingredients are added.

They do not contain a lot of calories and at the same time a person can feel full after having just a bowl of the dish. So, today we decided to show you a couple of healthy soup recipes which are a perfect cozy dish for the winted days. Check out the recipes!

#1 Chicken Noodle Soup

Ingredients:

½ pound of cooked chicken
2 cups of egg noodles
4 cans of chicken broth
1 small carrot
½ cup of celery
1 small onion
2 cloves of garlic
2 tablespoons of butter
1 teaspoon of salt
1 teaspoon of pepper
2 bay leafs (optional)

Directions:

Step 1

First you need to prepare all the ingredients. Peel the onion and chop it. Do the same with the garlic. If you find difficult to peel it, you can put it in the microwave for half a minute to soften it a little. Chop it as well.

You also need to cut the cooked chicken and the celery into small pieces. Then wash the carrot and chop it as well. You may cut it into circles if you prefer, but cubes are better for soups. And when you are done with the preparations, you may start cooking.

Step 2

Get a pot and heat the butter in it until it melts completely. Then add the chopped onion and the garlic and stir them. Let them sizzle for about a minute and then add the celery. Stir the ingredients well once again. Then add the carrot cubes and the cooked chicken and mix them with the other ingredients as well. After that add the 4 cans of chicken broth. Stir all the ingredients in the pot well.

Step 3

In a minute add the noodles and stir the ingredients in the pot well. Season the soup with a teaspoon of salt and a teaspoon of black pepper. Stir them well once again and then add the bay leafs if you have decided to add some. Bring the ingredients to boil and then cook the soup for about 20 minutes. You can taste if all the ingredients are well cooked before you take the soup off the hot plate.

And voila, the soup is ready! You can serve it while it is still hot.

#2 Potato and Ham Soup

Ingredients:

2 potatoes
2 cups of ham
2 strips of bacon
6 cups of chicken broth
2 cups of heavy cream
1 cup of onion
1 cup of celery
1 cup of carrots
3 tablespoons of flour
1 string of thyme
1 teaspoon of black pepper
2 bay leafs (optional)

Directions:

Step 1

First you need to get a deep pot. Cut the bacon strips into small pieces and heat them in the pot. There is no need to add extra oil since the bacon is oily enough and the heat will some of it to melt and it will serve as cooking oil. Then, when there is enough of oil from the bacon, add the chopped onion into the pot and stir it with the bacon pieces. Then add the celery and the carrot cubes. Stir them well with the other ingredients in the pot.

Step 2

By continuing cooking the dish, add the tablespoons of flour and mix them with the rest of the ingredients. Add the cups of ham which need to be cut into small pieces beforehand. And then add the potatoes which also need to be washed, peeled, and cut into big pieces beforehand. Season the ingredients with the thyme and the black pepper and mix all the ingredients well once again.

Step 3

Finally, you need to add the 6 cups of chicken broth and stir the soup. Add the bay leafs if you decided to add them into the soup. Bring the soup to boil and then remove the bay leafs. Then add the cups of cream and stir the soup once again. Continue boiling the soup for a couple more minutes and then it would be ready to be serve.

Serve the soup while it is still hot garnished with some dill if you like. Enjoy your dish!
