Avocados are one of those things you either love or hate. Avocados can be put in salads or eaten raw. But the truth is that raw avocado can really be awful. In salads they are delicious for me. But for many people it is absurd to eat them. The avocado is a food that is not a seasoned one. Yes the prices are higher in winter, but it is easy to find it and it is unbelievably good for your health.
No matter if you like avocados or not I think you should try the following recipes. They are delicious and make such combinations of the avocado that are unbelievably delicious. Also, they are good for you. Avocados can’t really be cooked in an unhealthy way. And that is one of the main upsides of it that I like.
I think that once you try eating the avocado in a different way than in a salad or raw you might just fall in love with it. It can be put in a sandwich. You can add it to a smoothie recipe or even a dessert one. And let’s not forget the guacamole. This is a blend between avocado, red onions and either sun dried tomatoes or fresh ones. Add some olive oil and you have a perfect appetizer. It is one of my favorites. And it is an easy 5 minute thing to do.
Avocado ,Grilled Cheese Sandwich
This is the type of sandwich everyone loves. Just like the grilled cheese but better in a way – more interesting. It has a lot of greens in it, so it won’t be that much of a guilt later. Well, there is still bread in it. But at least there are good ingredients.
Here is what you need if are serving for one:
- 2 slices of bread
- 2-3 tbsp Herb Pesto
- 2 slices white melty cheese or mozzarella
- handful fresh baby spinach
- ¼ sliced avocado
- 1 tbsp goat cheese (crumble it)
- some olive oil
Once you have all of your ingredients ,it is not that tough to get the perfect sandwich. You should firstly spread like a tbsp of pesto on each slice of bread. Start with one of the slices of bread (after you have spread the pesto) and put on the it a slice of cheese. Then add some sliced avocado. Spread some of the crumbled goat cheese. Put a few leaves of that baby spinach on top of that. Then you can top it with a second slice of the melty cheese you chose (or mozzarella). When you are done with all of that top it with the second slice of bread.
Now you need a pan. Preheat some oil in the pan for a few minutes. Your heat should be somewhere around the middle or your sandwich might burn. Put the sandwich in the heated pan. Cook it on each side until it gets that beautiful golden brown color that just scream delicious.
Put it on a plate. Grab a drink you like and enjoy! Easy, fast and very delicious.
Vegan Chocolate Cupcake
Being vegan is quite popular right now. People are taking their health and lifestyle way more serious than what they were used to. And veganism is not only about not harming animals but it is a way of life. It is what you believe about your food and what you would like to be fed with. But who says that if you are a vegan you can not have the dessert you want to have – chocolate cupcakes? You can have them and here is how!
What you need:
For the Cupcakes
- 1 cup unsweetened almond milk
- 1 tsp apple cider vinegar
- ¾ cup granulated brown sugar
- 1/3 canola oil
- 1 ½ tsp vanilla extract
- 1 cup white whole-wheat flour
- ½ cup unsweetened cocoa powder
- ¾ tsp baking soda
- ½ tsp baking powder
- ¼ tsp sea salt
For the frosting
- 2 ripe avocados
- ¼ cup unsweetened cocoa powder
- 3 tbsp maple syrup
- ½ tsp vanilla extract
Although it sounds like this might complicate it is not that much. Start by pre-heating your oven 350F. Grab a muffin tin with 12 paper cups. You should first whisk the almond milk and apple cider vinegar. Leave them like that while you go on with the recipe. In another bowl, beat the sugar, oil and vanilla until you get some foam. Then in another bowl, combine the flour, cocoa powder, baking soda and baking powder. Combine the first two mixtures. And then start adding them (it should be a wet mixture) to the flour, cocoa powder, etc. but be sure to do it slowly, so that it gets smooth in the end. Then put the mixture evenly into the muffin tin papers. Put in the oven and bake for 20 – 25 minutes.
While the muffins are in the oven you should make your frosting. Scoop the avocado fleshes off. Put the avocado in a food processor. Add up to it some cocoa powder, maple syrup and vanilla. Then puree it all. It should be very smooth and delicious.
When your cupcakes are out of the oven, let them cool down for 10 – 15 minutes. Then frost the cupcakes with the frosting you just made. Decorate them beautifully and put in a plate or where you would like them to sit. They will be amazing, so don’t miss an opportunity to make a photo and Instagram it later. Enjoy!
