Asparagus Main Courses Recipes for People on a Healthy Diet

 

There are a lot of people who are not huge fans of asparagus, or any healthy green vegetables. However, they do not probably know that asparagus has a lot of benefits for one’s health. This vegetable contains a lot of vitamins and minerals.

It is claimed to fight cancer, to boost the work of your brain, and it is a natural diuretic. Today we have decided to show you how delicious asparagus recipes may be and that is why we have prepared for you some main course recipes you should definitely try. Here they are!

Grilled Salmon and Asparagus

Ingredients:

2 salmon fillets

3 lemons

1 pound of asparagus

2 cloves of garlic

salt to taste

pepper to taste

olive oil

rosemary

thyme

Directions:

Step 1

First you need to marinate the salmon. For this purpose you are going to need a plastic zipper bag as well. So, put the salmon fillets in the plastic bag and season it with some olive oil. Probably about 2 tablespoons.

Then add salt and pepper to your taste. Squeeze the lemon juice from one of the lemons and add it to the rest of the ingredients in the plastic bag.

Finally, add the smashed garlic cloves and a thyme stem and a rosemary stem. Zip the bag and mix the ingredients as much as you can. The important thing is the salmon to absorb the smell and taste of the rest of the ingredients.

When you are ready with this, leave the bag aside for at least an hour so the salmon could be marinated well.

Step 2

Now you need to get the two remaining lemons and to cut them into circles. Get the asparagus and clean the stems. When this is ready you may proceed to grilling the salmon. Put the lemon pieces on the hot grill one next to the other. Then place the salmon on top of the lemon pieces and grill it this way. The salmon will absorb the fresh citrus taste of the lemons and as you know fish matches with lemon perfectly. You can also put a stem of rosemary on each of the two fillets for some more rosemary taste.

Step 3

Grill the salmon at medium heat for about 20 minutes. When this time is up, apply some olive oil on the asparagus and add it on the grill. Continue grilling the salmon with the asparagus for additional 5 minutes. When the minutes are up, remove all ingredients from the grill. Serve the salmon garnished with grilled asparagus and lemon pieces. And you can sprinkle the salmon with some fresh parsley as well. And your meal is ready!

Chicken and Asparagus Pasta

The next recipe is perfect for all of you who love pasta. It is not a difficult recipe and it will not take you that much time to do it. So, here is what you need to do!

Ingredients:

1 pound of spaghetti

1 pound of chicken breasts

1 pound of asparagus

½ cup of chicken broth

1 cup of Parmesan

2 cups of cherry tomatoes

4 cloves of garlic

4 tablespoons of olive oil

salt to taste

pepper to taste

Directions:

Step 1

The first thing you should do before starting to cook is to make sure you have a pot that is big enough to hold all of the ingredients in it. Then boil in it the spaghetti. You will need about 2 pounds of water. When the water starts boiling add the spaghetti and continue boiling them until they are fully cooked. Then drain the water from them and leave them aside. Use the same pot and continue cooking in it.

Step 2

Now add 2 tablespoons of olive oil in the pot and cook the first two cloves of garlic. You should have chopped them beforehand. Cook them for a couple of minutes until they turn brownish and then add the chicken breasts. You can cut them the way you want but in small pieces would be best. Season them with some salt and pepper to your taste and stir it well. Cook the chicken breasts for a couple of minutes until they turn brownish as well.

Step 3

Now you need to remove the chicken breasts from the pot, the garlic included, and leave them aside. Do not remove the pot from the hotplate but use it to cook the chicken broth. Add the chicken broth in the pot. There should be some olive oil left. Add the asparagus as well and season it with salt and pepper to your taste. After that add the last two cloves of garlic which also need to be chopped. Mix all the ingredients well and cook them for 5 minutes.

Step 4

When the 5 minutes are up, add the chicken breasts into the pot and stir the ingredients. Then add the cooked spaghetti and the last two remaining tablespoons of olive oil. Finally, add the Parmesan and the cherry tomatoes. Mix all the ingredients well before you remove the pot from the hotplate. Serve the spaghetti while they are still warm. And you are ready!
